The village of Miguel Grau and the Asociación
When Walter and Margot Knauer first contacted the cooperative in 2012, the picture on the ground looked very different: Coffee rust had infested a large part of the growing area and the coffee was being sold to large traders at knockdown prices. The families of the coffee farmers were on the edge of their existence.
Together with the coffee farmers, they founded the Asociaciòn Miguel Grau and developed a concept that sensitizes the farmers to local nature. Walter showed them that only the best quality coffee would benefit them in the long term and paid them the wages their work was worth right from the start.
Future prospects in the coffee trade
Over the years, they have jointly created the basis for long-term trade relations, high-quality specialty coffee and fair pay for farmers and farm workers through measures to improve quality. This includes, among other things, targeted on-site training in the care of organic plants, their harvesting and preparation, as well as regular quality controls and the financing of necessary infrastructure measures and new, single-variety seedlings.

Climate neutral product
Our Pacha Mama bears the distinction of being a "climate-neutral product". The CO2 pollution caused by transport, packaging and roasting is offset by our distributor through the purchase of climate protection certificates. Specifically, they support forest reforestation projects in Peru and a UN hydropower project in Uganda. In addition, Walter and Margot are committed to regenerating the forest through reforestation in the area surrounding the farm cooperative. This can be seen as the farmers' "pension", so to speak, as it allows them to pass on healthy forest soil to their children. We as roasters are also allowed to call our end product roasted coffee climate neutral, since the roasting process is already paid for by our dealer - at this point a big thank you for this great commitment to sustainability.

Who has the best coffee? Your mother!
Of course Mother Earth, Pacha Mama, what did you think? The term has stood for strength and fertility since the Inca culture, and you'll find these qualities in our beans, too. Our 100% organic Arabica comes with a good portion of nut around the corner. Its base of hazelnut and walnut combines smoothly with the finest chocolate notes. For the special touch, of course, the finish may not be missing: slightly citrusy, a hint of black tea, simply divine - and 100% guinea pig-free.

No flavors added
Hazelnut, walnut, chocolate, black tea? Yes, and all natural! More than 800 natural flavors can be found in coffee, without any additives. They are created by a wide variety of factors, such as the type of coffee, its growing conditions, its processing and roasting, and finally, you can also influence the variety of aromas in your coffee with the way it is prepared.
Coffee from Peru
On the small farms, the green coffee is picked by hand several times per season and sorted out again at the washing station. This means that, unlike with mechanical harvesting, only ripe beans make the journey to your cup. After quality control, the beans are washed and dried.
BIO coffee by unbound
From the very beginning, we at unbound coffee roasters have been careful to buy from small farms under fair conditions. With our specially developed trace-back-to-farm seal, it is possible for us to determine the exact origin of our beans and to always be informed about cultivation and working conditions on site. Nevertheless, the idea of including a certified organic coffee in our product range never really left us...
In the end, it took us three full years to find organic coffees of our desired quality standard and many more hours to perfect their roasting.
Hand roasted in Tyrol
With special care, your roast master Cati and boss Flo take care of the selection of the green coffee and its roasting with their own hands. For the packaging of the coffee, the Lebenshilfe Tirol actively supports us. In the 15kg drum roaster, the beans are gently roasted to the optimal degree with the latest roasting software from Cropster and thus develop their full aroma.
In our show roastery in Wattens in Tyrol, everyone is welcome to look over their shoulder as they roast, or to taste their way through the range to find the perfect coffee for home.

Preparation methods differ in the degree of grinding.
This plays a very big role for the taste. We want our coffee to taste perfect. Therefore, you can choose the grind accordingly.
Coffee grinder owners (congratulations!) or fully automatic machine owners please choose "whole bean"!
