The farm

At a proud 1730 meters above zero, the coffee cherries of the Valencia family ripen on the Monteblanco farm. The 14-hectare farm is located in the Huila region and is managed by Rodrigo Sanchez Valencia. In the Huila region, the coffee plants ripen on volcanic soils that are particularly rich in minerals and are spoiled by natural rainfall. With so much attention, only pampered little stars can mature. But not only the location is special. The coffee plants themselves are also special. Only coffee cherries of the Purple Caturra variety are used for this coconut-lemon coffee. The differences to normal coffee plants are the growth height and the sugar content of the coffee cherry. All good things come in threes, and to make the taste really go through the roof, the farmers have come up with a special preparation process. 

The special thing about this coffee: the preparation process

Even before a ladderless hand harvest, the microorganisms inherent in the coffee cherries are separated and fermented together with citrus and desiccated coconut for 190 hours. The goal of the fermentation, is to enhance the flavors of the fresh and light summer fruits. To transfer these flavors later to the coffee, a large amount of microorganisms is needed. After 8 days of fermentation, the sugary coffee cherries with the pulp are placed in sealed containers and fermented for another 180 hours. This is where the high sugar content of the coffee cherries comes into the limelight. This serves as a further food source for the microorganisms and ensures that the aromas already extracted can be absorbed into the coffee bean. Fermentation is over when the sugar content is still above 6 Brix (sugar content indication in coffee beans) and above 4 pH - because this is the point at which the coffee reaches the peak of its flavor development.

A lot helps a lot... is at least the motto here. Besides the preparation, the coffee variety, its growing conditions, its roasting and finally also the preparation have an influence on the taste of the coffee.

Hand roasted in Tyrol

With special care, your roast master Cati and David take care of the selection of the green coffee and its roasting. For the packaging of the coffee, Lebenshilfe Tirol actively supports us. In the 15kg drum roaster, the beans are gently roasted to the optimal degree using the latest roasting software from Cropster and thus develop their full aroma.


In our show roastery in Wattens in Tyrol, everyone is welcome to look over their shoulder as they roast, or to taste their way through the range to find the perfect coffee for home.

Preparation methods differ in the degree of grinding. 


This plays a very big role for the taste. We want our coffee to taste perfect. Therefore, you can choose the grind accordingly.


Coffee grinder owners (congratulations!) or fully automatic machine owners please choose "whole bean"!
