Impressions from the coffee trip to Mexico by Flo and Astrid
From field to bean: The art of coffee preparation?
The ripe coffee cherries are picked individually by hand directly in the field ("picking") or stripped from the branch ("stripping"). The coffee bean is then separated from the pulp. There are three common processing methods:
- wet processing (“washing” or “wet process”): The beans are cleaned with water, fermented and then dried.
- Dry processing ("drying" or "natural process"): The coffee cherries are dried in the sun along with their pulp. This method often gives the coffee fruity and sweet aromas.
- Semi-dry processing ("honey process"): An intermediate form in which part of the pulp is removed while the bean is fermented and dried in the remaining pulp.
This processing often takes place directly on the farms. In regions with many small farms, coffee farmers join together to form so-called cooperatives, as the high costs of processing facilities often cannot be borne by individual families. The coffee cherries are usually brought from the mountain to the valley, where they are carefully sorted, processed and prepared for export.

At Coffee, in particular organic coffee from countries like Peru, it is often more difficult to understand under what conditions it was produced. Here we are on certificates and seal which, unfortunately, are not always as transparent as we would like.
However, due to our small and independent structures, we can offer you more. We are in close contact with farmers and suppliers and experience first-hand how the Coffee is grown, harvested and processed locally. We are happy to pass this knowledge on to you so that you Coffee enjoy the most fair and sustainable is.

Transparency in certifications - how much truth is behind them?
Not only we at Unbound Coffee Roasters had to invest a lot at the beginning to excellent specialty coffee Especially for small coffee farms The hurdles are often enormous: the costs for certificates and seals are high, regular checks bring additional effort, and the risk of crop failures burdens the farming families strong.
But where does the surcharge, which is characterized by various certificates Unfortunately, the necessary transparency, and the families who grow the coffee rarely benefit directly from it.
We at Unbound therefore rely on direct trade and long-term partnerships to fair and sustainable coffee Together with you, we support the people behind your coffee.
All of this makes transparency and openness more important than any certificate in the world
Now it is up to you not to just look away. We give you all information that we have and will continue to contact to the farms so that no one has to feel guilty about enjoying a good cup of coffee.
