The roasting process in the drum roaster

We roast our coffee in a 15 kg drum roaster from Giesen, heated with gas. For an even roasting result, we use roasting software from Cropster.

The most important variables during roasting? Gas quantity, supply and exhaust air – they determine the temperature and thus the aroma of the coffee.

Hand roasting vs. industrial resort

We roast our coffee beans gently and slowly so that their full range of flavours can unfold. High-quality Beans contain a wealth of flavorsthat are preserved through long-term roasting - and ultimately end up in your cup. Our roasting times are between 8 and 20 minutes.

 

By comparison, industrially roasted coffee is often processed in huge batches at extreme heat in just 2 minutes. This leads to bitter and burnt notes.

 

Coffee naturally contains acid. However, gentle roasting partially breaks down the so-called chlorogenic acid - an acid that can irritate sensitive stomachs. Industrial coffee often contains more of it. So if you are sensitive to coffee, you should try high-quality, gently roasted beans. In small quantities, chlorogenic acid acts as an antioxidant and can even be beneficial to health.

In red the exhaust air temperature, in blue the temperature of the beansThe roasting time is around 18 minutes, it is a medium to dark roast, which enhances roasted and chocolate aromas. Each of our coffees has its own roasting profile and is constantly adjusted and optimized.

The roasted team

Roasting master Valentin and his team take special care to select the green coffee and roast it themselves. You can find out what makes the work in the roastery so special for them on our team page.

 

Every Wednesday, Manni and his supervisor pack our specialty coffee quickly and carefully for you. This valuable collaboration is a win-win for both sides. We are proud and grateful to have the Lebenshilfe Tirol team on board - together we ensure that your coffee is packaged freshly, sustainably and with lots of love.

Our home in Wattens

We are very happy to have found a home in the Wattens workshop. We have made ourselves comfortable in the old Swarovski factory halls - surrounded by a brilliant network of founders and entrepreneurs.

 

Our location in the middle of Tyrol, near Innsbruck, is a stroke of luck. This allows us to live out our love of the mountains and nature as well as our passion for coffee.
